Why does bring of wool gives smell similar to burning of hair?

Because both wool and silk are protein-based, like dog hair, feathers, and human hair. Synthetic fibers are either petroleum or plastic based (and you can certainly smell that when they burn) and plant fibers are cellulose, so they react much like paper and leave a light ash.
