Amylase are linear polymers of D-glucose, but the glycosidic linkages if cellulose se of amylase are a-1,4. The different configuration at the anomeric carbons deter orientation of consecutive glucose residues. Thus, cellulose is capable of forming onded structure, whereas amylase forms an open helical structure.
