Why does coagulation of milk protein take place during yoghurt production?

Because of bacteria lactobacillus which breaks down lactic acid which leads to clumping of milk protein

In formation of yogurt lactobacillus plays an important role. It clumps the milk together so that yogurt gets that texture and it coagulates.
