It happens because iron is more reactive than copper,so it displaces copper from copper sulphate and form iron sulphate. As a result copper sulphate which is blue in colour changes to iron sulphate which is of green colour.

Reaction taking place:
CuSO4 + Fe -----> FeSO4 + Cu
