Why does copper wore takes bluish green colour when we heat it in a gas stove?

Copper is a metal and metals react with oxygen to get oxidized which form their oxide.

In same way copper react with oxygen and become oxidized

So

when we heat copper it react with oxygen and form oxide these oxidized copper is green in colour

hence, when we heat copper it takes bluish green colour.
