Why does dough of puri sink but puffed puri float ?

Puffed puri in a bowl of water would float as it is lighter than water. However, after sometime it would start to sink due to absorption of water by the dough of puri.

than water/oil but after some time, the puffed puri starts to absorb the water/oil and that makes the puri heavier than water/oil, and then it starts to sink.
