Hello guys Namaste,
Edible oils show rancidity when store it for long periods because it undergo aerial oxidation and becomes rancid. Fats in the oil have [C=C] Carbon Carbon double bond in their structure .These bonds are broken by oxygen that is why edible oil becomes rancid.
