Not only edible oils but all edible food containing fats and oils get rancid when stored for a log period due to oxidation reaction their taste and smell changes to prevent rancidity we may
1. keep the food material in an air tight container
2.flush in nitrogen gas
3.flush in oxidising agents
4.keep in refrigerators

When food is damaged in such a way that it becomes unfit for consumption by human beings is called rancidity.
When edible oils are stored for a longer period of time the oxidation occurs.There is carbon-carbon double bonds in fats and oils which are broken down by the oxygen in the free space or atmosphere.
