why does edible oils shows rancidity when stored for long period ?

When edible oil is stored for a long time it undergoes oxidation and become s rancid . Fats in the oil have carbon -carbon double bond in their structure .These bonds r broken by oxygen that's why edible oil becomes rancid.

it undergoes oxidation and became Oxidative rancidity is associated with the degradation by oxygen in the air. Via a free radical process, the double bonds of an unsaturated fatty acid can undergo cleavage, releasing volatile aldehydes and ketones. Oxidation primarily occurs with unsaturated fats.
