Why does energy preferentially spread out in an isolated system?

Because the Universe is an isolated system (of all there is), and the Second Law of Thermodynamics states that in a closed (or isolated) system, unconstrained energy will spontaneously tend to disperse (spread out) over time, from more concentrated forms, to less concentrated forms.
