why does ghee does get freezed but not oil​

Ghee freezes at room temperature but mustard oil doesn't. The double bonds in the hydrocarbon chain of an oil make them more rigid than the hydrocarbon chains of a fully saturated ghee. These rigid chains restrict the approach of the polar (charged) heads of the molecules to come close to each other.
