Why does it take less time to make curd in summers as compared to winters

SD lactobacillus bacterium growth is favourable from 35-40 degree Celsius so it can easily multiply inside milk and can convert it to curd. but in winter temprature is low below 35 degree Celsius. so it inhibits the growth of the bacterium.
