At warm condition bacteria turn the milk into curd. So in summer the temperature is high and favourable for the bacteria growth. As a result, the bacteria multiply faster which leads to change the milk into curd. That iss why it takes more time in winter for the curd to set compare to summer time.

Because bacteria (Lactobacillus) grows faster in summer than in winter. That's why it take less time to prepare curd in summers as compared to preparing it in winters. Lactobacillus helps in changing milk into yogurt (curd).
