Because bacteria ( LACTOBACILLUS) grows faster in summer than in winter. That's why it take less time to prepare curd in summers as compared to preparing it in winters..... LACTOBACILLUS helps in changing the milk into yogurt (curd).

As we all know that, in summer the temperature is high which is favorable for the growth of bacteria therefore it helps bacteria to multiply faster which helps them to transform milk into curd. This is the reason why curd take time to prepare in winter than in summer.
