Because bacteria ( LACTOBACILLUS) grows faster in summer than in winter. That's why it take less time to prepare curd in summers as compared to preparing it in winters..... LACTOBACILLUS helps in changing the milk into yogurt (curd).

It takes less time to prepare curd in summer than winter because in winter season, bacteria involved in the formation of curd tends to freeze or work slowly as of the cold. In summer season bacteria does not slow down because there is no cold.
