Milk is turned into curd by bacteria, the formation of curd from milk is due to curd containing several micro-organism including Lactobacilli bacteria. When little bit of curd is added to warm milk then Lactobacilli bacteria present in curd multiply in milk and convert the lactose sugar into lactic acid converting the milk to curd known as curdling.
Explanation:
Basically when pH levels drops in milk it turns acidic and the protein molecules in the milk attract one another to form lumps also known as curdles. It's more effective on warm milk and there is a quick reaction of lumps.
