why does milk rise upon boil but water doesnt ? what is the technical reason

we must be aware of the fact that milk is not a
normal liquid like water .milk is far more complex as it is made up of 87 prcnt water,
4 prcnt proteins ,5 prcnt lactose ..
when we boil milk fat,sugar,proteins and minerals get seprated .
as these are lighter than milk they collect on surface to form cream .
so as the milk is heated ,out of the 87 prcnt of water ..some of its gets converted into vapour
these bubbles of vapours start rise above ..

may i not sure but this is because of the gaseous particles in milk when the milk is going to boil ,the gaseous particle get formed pressure in milk
