It becomes brown due to what are called the Maillard reactions. These are complex chemical reactions between amino acids and sugars that generate loads of various molecules that give cooked food its colors and flavors.
If meat is subjected to extreme heat it will eventually break all the way down into carbon. This happens on the outer layer during char-grilling for example.
