It is due to the presence of the pigment tat give orange or yellow colour ..ie Carotenoids ( carotenes ,xanthrophylls)

HEY .............
The ripen mango is not always yellow in colour .The raw mango is green due to its chlorophyll.As the mango ripens the ,chlorophyll is broken down forming other pigments which give colour to the ripened mango
