why does steam burn more severely than hot water​

Steam burns do have to potential to cause more damage than scalding. The reason has to do with the latent heat of vaporization. This is the amount of heat energy necessary to change the phase or state of matter from liquid to gas. This energy is absorbed by the liquid, but does not change the temperature.

With respect to our hands : steam can cuse more severe burns than water at 100°C because the steam is more hotter than water and when we put our hands above the steam , the heat gets transferred to our hands because the temperature of our hands is lesser thean the temperature of the steam and hence , it cause more severe burns than hot water.
