It is because iron displaces copper sulphte solution to form Fe2SO4 and copper metals gets deposite as iron is more reactive than copper .
Fe(s) + CuSO4 (aq.) - FeSO4 (aq.) +Cu(s)
Fe(s) + CuSO4 (aq.) - FeSO4 (aq.) +Cu(s)
