During electrolysis chemical reactions takes places inside the electrolyte. Hence colour will change indicating the chemical change.
For example:
CuSO4+Fe ------> Cu + FeSO4
Displacement reaction takes place and Blue colour Of CuSO4 fades away and changes to light green colour due to formation of new substance called FeSO4 and copper gets deposited on iron nail.
