The fruits and vegetables contains polyphenol oxidase...which reacts with oxygen and the oxidation process takes place... Then it turns brown or black

hey mate here is ur answer....
the cut surface of brinjal turn brown on exposure to air for sometimes because of the enzymes present on brinjal reacts with oxygen.and that enzyme is known as "TRYOSINAGE"
It is a enzyme which when came in contact with oxygen, it starts exposing which turns the colour of peeled vegetables brown......
