There is simple scientific logic hidden behind !!!
As u know yeast is responsible for fermentation and no doubt it is used in bread and cake making as well .. So as yeast undergoes fermentation there is release of Carbon dioxide gas which rises up and leads to Swelling of dough kept overnight !!!
