When edible oil is stored for a long time it undergoes oxidation and become s rancid . Fats in the oil have carbon -carbon double bond in their structure .These bonds r broken by oxygen that's why edible oil becomes rancid.

When edible oils are stored for a longer period of time then oxidation occurs. There is carbon-carbon double bonds in fats and oils which are broken down by the oxygen in the free space or atmosphere.As a result, after a long period of time fats and oils become rancid.
