Why does the food items containing oil and fat are packed with nitrogen?

When nitrogen gas is flushed in packets of food containing oil and fats it cut off the contact of air with the food as when food containing fats and oil when left in air for longer period of time they will form rancids and then they won't be eatable anymore.

Rancids: when oil and fat containing food left in air for longer period of time they react with gases present in air and undergoes rancidity and forms rancids tht spoils the taste of food.

Practically: if u leave some biscuits in a tray for some days u will later observer tht they are no more crunchy instead they are a little soft and there taste would differ too this shows tht they have undergone rancidity reaction and have formed rancids tht spoiled their taste.
