The enzyme which convert milk into curd is active only in acidic condition. so acid produced during curd formation first neutralises the base present in the milk. therefore milk takes long time to set as curd.

The enzyme that turns milk towards curd seems to be involved except in an acidic environment. A further explanation is given below.

Explanation:

  • Rather because the alkali contained in that as well must first be neutralized either by lactic acid that has been produced throughout curdling.
  • Therefore the base contained throughout the milk is neutralized first by acid formed throughout curd formation. It also takes a while allowing milk and arranged as curd.
