As this milk is slightly more alkaline than other, therefore, acid produced to set into curd will be neutralized by baking soda added by milkman. Hence, this milk takes a longer time to set as curd.

when milk is set intentionally to turn it into curd...A bacteria known as Lactobacillus us released which slowly helps in forming curd . That's why milk takes overnight to form curd under certain conditions
