why does the poet use the phrase 'Ten thousand saw I at a glance?'​

A hyperbole is an exaggeration not meant to be taken literally. When the poet says that he saw ten thousand daffodils at a glance, he certainly means a lot of flower, a host of daffodils, and not 'ten thousand' literally. He didn't actually count it.
