When we bath for a long time, our hand are exposed in water for long time.outside our hand behave as hypotonic solution and our hands behave as hypertonic solution. Therefore, water move from high concentration to low concentration. The water does not enters our hand, water leaves from our hands and hence it is shrink.

hey mate :)
scientific reason -it is due to a phenomenon called osmosis
osmosis - it is the movement of solvent particles (I. e. water) from lower concentration of solute of higher concentration through a semi permeable membrane (I. e membrane of our epithelium tissues)
so when we remain in water for a long time the water from our fingers goes to outside and our fingers shrink... it is also called exosmosis
evolutionary reason - a long time ago shrinking in our fingers helps us to increase our grip strength in water like for capturing the prey and increasing our holding strength.. but this shrink thing is decreasing generation to generation but related to evolution..
