Why does the sweet potato skin start shriveling after a few days??

Sweet Potatoes have a nice skin outside which protects the vegetable inside. As long as the vegetable is fresh, with water content and nutrients still present in it, the skin remains fresh and robust. However, after  a few days, once the plant has been rooted out, the water content and nutrient levels start to depreciate. One of the early signs of this is shriveling and wrinkly skin and is also an indication that the vegetable might go bad very soon.
