the heat energy released is absorbed by water to convert into gas phase
in other words heat energy is converted into kinetic energy which is given to water molecules. these molecules now inhibit energy hence change into vapour form
since during this process of boiling due to rlease of vapours there is absorbtion of heat hence temperature remains contant
graph might help for explanation
