Why does the temperature of a substance remain constant during its melting point boiling point?

the temperature remains the same BC for a change in state, the energy that is being given to it gets used as latent energy which is used in change in state. this even though the temperature remains the same, there is change in state. also why steam at 100 degrees causes much severe burns than water at 100 degrees
