Why does the temperature remains constant when solid changes into liquid and liquid into gas

During change of state (from solid to liquid, gas to liquid, etc.) the heat energy that is supplied to the substance is used for the change of state and not to increase the kinetic energy of the molecules (that contributes to the temperature of the substance), so the temperature remains constant.
