Becouse pressure cooker is black coloured and we all know that black colour attracts heat and is good conductor of heat so the food inside it gets cooked faster as compared to simple cooker

The food will be cooked faster if temperature is more. We all know the boiling point of water. That is 100 degree Celsius. Water can not boil over 100 degree. But if we increase the pressure water can boil on higher temperature. Its boiling point increases.and food boils upto 121 degree Celsius in pressure cooker, which is quite high for food and can save a lot of time and energy. Thus pressure cooker is energy efficient from 70 to 90 percent.
You can see relation between temperature and pressure which was given by Clausius–Clapeyron equation.

At higher pressure over the liquid, the liquid boils at high temperature and cooking occurs faster.
