Water kept in the earthen pot become cool because of the poures present on the earthen pot. The water seeps into these pores and evaporate, taking the heat from the water inside the earthen pot.

Earthen pots have small pores through which the water seeps and as evaporation leads to cooling of the substances the water cools down very easily.
