Because the water seeps through the holes present in the pot and evaporates. Also evaporation causes cooling that it why the water kept in earthen pots become cool during summer and also the rate of evaporation increases in summers due to increased Temperaturethat's ol :) An earthen pot has small pores in its walls.

earthen pot is made of mud (mitti) which absorbs cold teperature to cool water.
