Why does this milk take longer to make curd?

The milk becomes curd and the time taken depends on the quantity of culture (curd starter) added and the temperature of the milk. If the milk is warm or if it is summer in India, the curd sets faster and may become sour unless kept in the fridge once set. If it is winter, we may need to wait overnight for the curd to set and the curd stays sweet for more time without refrigeration. There are curd maker machines now available for a few hundreds - they are basically thick plastic containers surrounded by a low wattage heater to keep the milk warm. Te curd sets in 2 to 4 hours.
