Why does water attract so many other kinds of molecules?

Water attracts other molecules because water's (H₂O)  molecular mass is 18  (2 × 1 + 1 × 16)  making its valency -2. Most elements and molecules have a valency of +2 making them attracted to water.

All elements and molecules want to be noble gases, so they can move freely.
