The question should not be why Yudhishthir accepted the invitation because that is clearly explained in the epic. The matter of conjecture is why did Yudhishthir play himself and not depute Sahadev as proxy just like Duryodhan made shakuni his proxy. And second even if he played himself while he was staking everything like a mad man why didn't his brothers stop him either than or even earlier
About accepting invititation
At the end of Rajasuya Vyasa informed him of the impending catastrophic war after 13 years that will lead to large scale devastation and death and that it will be caused due to his performing the Rajasuya (he was right - it was his being made emperor and the wealth he had accumulated and his mayasabha that made Duryodhan envious and hell bent on robbing Yudhishthir of it)
So yudhishthir thinks what can he do to avoid war. He makes an oath that he will avoid conflict with everyone inspite of any circumstance. He will make sure no one gets offended with him and then hopefully there will be no war.
When he gets the invitation it is from Dhritarshtra and rejecting his invitation will offend him and Duryodhan as well so Yudhishthir accepts inspite of his reservations.

Why did Yudhishthira accept the invitation for the dice game?
Because, it was a considered rude to the inviter and cowardly of the invitee to reject it. The invitation for the game was sent by King Dhritarshtra. Pandavas respected him on a personal level, he was their father’s big brother. On a political level, he was the ruler of the great Kururashtra from whom they had borrowed a piece of land to rule over. Yes, he was focusedly altering stuff to give them pain. Yes, he was utterly unjust to them since forever. Yes, he never missed a chance to humiliate them and their mother. Yes, he had blind faith and love in his sons’ capabilities. Yes, he was more a father than a king. But the Pandavas kept all that aside and chose to respect him.
