Why don't air particles act as observers in double slit experiment?

Observers have a very special role in Quantum mechanics. Some physicist argue that 'conscious' observers can collapse the wave function.
In the case of double slit experiment, the observation is the measurement of the path which an 'indivisual' photon took.
So as air molecules do interact with the photons but they don't 'tell us' the path which the photon took.
That imformation is still not gained and therefore the interference pattern emerges
