why don't the breathing stop while we sleep?

because some cells are voluntary and some of them are non voluntary

As Brain send messages to the muscles controlling breathing even while sleeping, these muscles are voluntary in nature .Though snoring may occur otherwise we breath normally during sleeping. Hope it helps.
