Why don't they just make bigger CPUS? If it is bigger, then they can fit more cores and threads and transistors in it right? So why don't they?

That's because of variety of reasons, not potable, cost of manufacturing will be higher, the heat produced - they'll have to make different and larger cooling systems. Also the performance doesn't increase drastically

So for everyday, personal computers the specifications are more than enough. But if you really need something greater then, I guess there are options.

That's why they don't really make bigger CPUs for personal computers.
