Why don't we use water instead of mercury in torricelli experiment.if we are ready to do ts experiment, what lent of tube is needed

Because water is very less dense as compared to mercury and hence a very long tube will be required to carry out the experiment.. Another reason is that water is easily effected by conditions such as temperature pressure etc and hence the atmospheric pressure would not be very accurate..
If water was to be used for the experiment, a tube of around 13metres to 13.5metres would be required which is very hard to construct and if constructed very hard to handle..
