why dough rises swells, when it is treated with yeast

mannatmarya: This leavening agent makes bread dough rise through fermentation. The yeast changes the sugar in the dough into carbon dioxide gas and ethanol (alcohol). The gas, trapped in the dough, makes it rise; the alcohol produced during fermentation evaporates during baking.

\sf{Answer :-} The dough rises because yeast added to 'maida' reproduces rapidly, and produces carbon dioxide gas while respiring. This gas fills the dough and increases its volume making it to rise.

Based on this principle, yeast (which is a micro-organism) is used in the preparation of breads and cakes. It helps in making them spongy.

The dough rise and swell up because any leaving organism respire and releases carbon dioxide and Yeast perform anaerobic respiration and release carbon dioxide and these makes the dough swell up
