The evolution of humans took long time and during these period humans have developed there survival instinct in which we learned that eyes are most important for survival.
As a result when we feel any harm or fear we close our eyes that's why when we hear loud noise our survival instinct strikes and we try to defend our eyes.
Therefore we close our Eyes when we listen any high or loud sound like hammering.
