Because there is grain named pollen which consists of male gamete without them they can't fertilise as flower need a male and a female gamete for fertilisation

Pollination is the process of transfer of pollen grains from the anther to the stigma of a flower(which means it is the male gamete) .Fertilization is fusion of gametes , if pollination does not there will be no male gamete for fusion, therefore without pollination fertilization cannot take place
