why food products containing fats and oils are packed in nitrogen

Nitrogen is an inert gas which prevents the oxidation of fats and oil containing compounds and thus they do not go rancity

To prevent the food products from rancidity as food products containing oil and fat get spoiled due to rancidity (effect of oxygen in food) .so they are packed in nitrogen so oxygen cannot act on food.
