Germination in dry seeds starts when they are soaked in water. Metabolic activity in dormant seeds is initiated when they are hyrated with water. This softens the stored food in the endosperm which is transformed into active proteins, fatty acids, vitamins and other nutrients. The concentration of carbohydrates and proteins is also high in these sprouting seeds.
