The aluminium is a very powerful reducing agent, and this combined with heating causes the nitrate ions to form ammonia gas. This can be tested for by holding a piece of damp red litmus paper over the end of the test tube. The ammonia will formalkaline ammonium ions in the water and turn the paper blue.
